Dietetics Grad’s Latest YouTube Cooking Competition Episode Aims for Efficiency With Ingredients
The newest episode of “Terps vs. Pros: Sustainable Food Challenge” pits senior Jaron Smith, a member of the wrestling team who knows some moves in the kitchen as well as on the mat, against Dumar Brown, a chef in 251 North Dining Hall, to create healthy, vegetarian meals while minimizing waste and using every bit of the ingredients to provide more nourishment per dollar.
Host and recent dietetics graduate Patrick Keenan ’19 created the show, sponsored by the University of Maryland Sustainability Fund, to help off-campus students or those who don’t make it to the dining hall fuel the mind and body. In this third episode in the YouTube series, Keenan shows how Dining Services uses composting tanks to convert the food left on diners’ plates into fertilizer for Terp Farm, which in turn supplies the dining halls with fresh produce.
